Coconut Lemon Pie Energy Balls recipes

These delicious little balls are a lemony delight!
Preparation Time: 10 minutes + 30 minutes set time
Servings: About 20 balls
Ingredients:
- 1 cup raw coconut flakes + extra to roll balls in (or you can use a finer coconut for rolling if desired)
- 1 cup raw cashews
- 2 tablespoons coconut oil, melted
- 2 tablespoons yacon syrup or maple syrup
- Zest of 1 large lemon
- Juice of 1/2 lemon
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon pink sea salt
- Directions:
- Add cashews to food processor and pulse until well chopped. Add the rest of the ingredients in and blend until the mixture resembles a sticky crumb.
- Roll into balls, and roll to coat into coconut.
- Set in refrigerator for at least 30 minutes, or in freezer for 10 minutes.
