Vegan Coconut Matcha Macaroons

Small but mightily delicious! These subtly sweet and earthy treats are a delight for any occasion and every day. Packed with nutrients, antioxidants, and energy-boosting green tea.
Preparation Time: 15 minutes + Setting Time: 1+ Hours
Servings: 2 dozen macaroons
Ingredients:
- 3 cups coconut flakes
- 1/2 cup coconut oil, melted
- 1/3 cup finely ground almond flour
- 2 tablespoons yacon syrup
- 1 1/2 tsp matcha green tea powder
- 1/4 tsp vanilla bean puree
- 1/4 tsp pink sea salt
Directions:
- In a food processor, blend coconut and melted coconut oil for 1-2 minutes.
- Add the almond flour, yacon syrup, matcha, vanilla, and salt. Process until well combined.
- Using a teaspoon or a cookie scoop, form small balls.
- If dehydrating, place them on dehydrator trays. If not, place on parchment lined baking sheet.
- If dehydrating, dehydrate at 115° for about an hour. Be careful not to over dehydrate. If not, just chill macaroons in the refrigerator for an hour before eating.
- Store macaroons in an air-tight container in the refrigerator for 5-7 days.
