Vegan Coconut Matcha Macaroons

Small but mightily delicious! These subtly sweet and earthy treats are a delight for any occasion and every day. Packed with nutrients, antioxidants, and energy-boosting green tea.

Preparation Time: 15 minutes + Setting Time: 1+ Hours

Servings: 2 dozen macaroons

Ingredients:

Directions:

  1. In a food processor, blend coconut and melted coconut oil for 1-2 minutes.
  2. Add the almond flour, yacon syrup, matcha, vanilla, and salt. Process until well combined.
  3. Using a teaspoon or a cookie scoop, form small balls.
  4. If dehydrating, place them on dehydrator trays. If not, place on parchment lined baking sheet.
  5. If dehydrating, dehydrate at 115° for about an hour. Be careful not to over dehydrate. If not, just chill macaroons in the refrigerator for an hour before eating.
  6. Store macaroons in an air-tight container in the refrigerator for 5-7 days.
