Chicken with Goldenberry Salsa

Servings: 4
Ingredients:
- 4 chicken breast fillets, washed & pat dry
- 1 tbsp. oil
- Pepper & salt to taste
For the salsa:
- 1 piece ginger, peeled & cut into small pieces
- 1/3 cup golden berries, dried
- 1 tbsp. white balsamic glaze
- 2 onion springs, washed
- 1 red pepper, small, quartered, seeds removed & washed
- 2 tbsp. walnut oil
- Pepper & salt to taste
Directions:
- Season the chicken breast with pepper and salt; roast the pieces in a pan for 12 to 15 minutes; turning over occasionally. Let rest for a while, once you are done with the cooking.
- Quarter the pepper, remove the seeds and wash. Wash the spring onions, peel the ginger and cut it all into little pieces.
- Mix quartered peppers together with the spring onions, goldenberries, walnut oil & white balsamic glaze.
- Add in the chopped coriander & season with pepper and salt.
- Slice the chicken breasts & serve the pieces with salsa
