Cacao nibs are simply raw cacao beans that have been roasted and ground into small chunks that are fun to call nibs. Similar to coffee, the roasting process is a big determiner of what the flavor will be. A “light roast” will be less bitter and intense than a “dark roast.”
Yacon syrup is an extract from the yacon root. In syrup form, this bad boy is sweet like molasses. It’s low glycemic, high AF in antioxidants, and loaded up with a prebiotic fiber, that keeps you feeling satiated and full, all while helping you out with your digestion and keeping your insulin levels from skyrocketing.

How To Eat Them

One of the best parts about cacao nibs is how easy they are to eat. Of course, when they’re drizzled with yacon syrup, we don’t expect you to be able to stop yourself from eating them straight from the bag. But should you be able to make it that far, the list of things you can add these little syrup-covered nibs to is never ending.
We aren’t going to be basic, so we won’t just leave you with the obvious smoothie bowl or morning oatmeal suggestion. Here’s a few out-of-the-box ideas for using your yacon-sweetened cacao nibs:

Top a baked sweet potato with cinnamon, salt, Miyoko’s vegan butter and a little bit of maple syrup. Then sprinkle on your yacon-sweetened caco nibs and take an Insta photo ’cause you know that is going to look incredible!
Make a batch of homemade chocolate chip cookies, but sub cacao nibs sweetened with yacon syrup for the chocolate chips. You won’t be sacrificing the sweetness of chocolate chips, but you’ll be using a much healthier alternative!
Throw your yacon-sweetened cacao nibs in a food processor with garlic, black pepper, salt, and ANY other spices your heart desires. Use it as a dry rub for tempeh or veggies, or add a bit of oil and toss vegetables in it for a roast. If you try no other recipe, try this one!
If weve learned nothing else here, its that not all superfoods are as they first appear. You may not think you like raw cacao at first, because it’s too bitter. But drizzle on a little yacon syrup and you’ve changed the whole game!
