Chicken with Goldenberry Salsa Recipes

  • 4 chicken breast fillets, washed & pat dry
  • 1 tbsp. oil
  • Pepper & salt to taste

For the salsa:

  • 1 piece ginger, peeled & cut into small pieces
  • 1/3 cup golden berries, dried
  • 1 tbsp. white balsamic glaze
  • 2 onion springs, washed
  • 1 red pepper, small, quartered, seeds removed & washed
  • 2 tbsp. walnut oil
  • Pepper & salt to taste


  1. Season the chicken breast with pepper and salt; roast the pieces in a pan for 12 to 15 minutes; turning over occasionally. Let rest for a while, once you are done with the cooking.
  2. Quarter the pepper, remove the seeds and wash. Wash the spring onions, peel the ginger and cut it all into little pieces.
  3. Mix quartered peppers together with the spring onions, goldenberries, walnut oil & white balsamic glaze.
  4. Add in the chopped coriander & season with pepper and salt.
  5. Slice the chicken breasts & serve the pieces with salsa
